Strawberries are the perfect addition to this salmon salad and turned this creamy dressing into something magical!

✔️Romaine Lettuce
✔️Baby Kale
✔️Cucumbers

RECIPE: CREAMY STRAWBERRY 🍓 BALSAMIC DRESSING

INGREDIENTS: 
▪️ 1/2 cup chopped strawberries 
▪️ 1/4 cup balsamic vinegar
▪️ 3 Tbsps extra virgin olive oil
▪️ 2 Tbsp tahini 
▪️ 1 clove garlic, minced garlic
▪️ 2 tsp tsp dried oregano 
▪️ 1 tsp sea salt 

TO MAKE >>> add all the ingredients into a high speed blender and blend until smooth. Add more water as needed to reach your desired consistency. Store in the fridge for up to 7 days!

✅ MEAL PREP TIP: Setting aside some time as part of your weekly meal prep to make homemade dressings, sauces, jams etc. are totally optional but so rewarding!  Skip the store-bought stuff and make a double or triple batch of this recipe and enjoy this dressing all week!

This MANGO SALSA is tastiest side dish or topping for grilled meats or fish. Perfect for Father’s Day grilling! 

This recipe is very forgiving (just like dad 👨🏻). There are 🚫 precise measurements. 
Just throw everything into a bowl, taste and adjust the seasoning to your liking.

INGREDIENTS: 
🥭 mango, diced 
🌶️ peppers, diced 
🧅 red onion, finely chopped 
🌿 lots of fresh cilantro, roughly chopped
a drizzle of toasted sesame oil 
1-2 splashes of rice wine vinegar
juice of 2 limes
1-2 tsp coconut sugar or honey 
pinch of sea salt 

Add all the ingredients into a bowl and mix to combine. Taste and adjust the seasoning to your taste. Add more lime juice for more tang, add more coconut sugar if you prefer it a little sweeter etc.

Making homemade popsicles is not as hard as you think. Simply throw all your ingredients into a blender, pour into a popsicle mould and freeze! 

These popsicles were creamy and delicious, made with no-dairy, no-refined sugar and no weird ingredients like the store-bought stuff.

RECIPE: 3-INGREDIENT STRAWBERRY POPSICLES 

INGREDIENTS: 
▪️ 1/2 cup water 
▪️ 2 Tbsps @addjoi cashew milk base 
▪️ 3 Tbsps honey 
▪️ 2 cups chopped strawberries 

TO MAKE >>> add water, cashew milk base and honey to a high speed blender and blend for 30 seconds. Add chopped strawberries and blend until smooth. Pour mixture into popsicle moulds and freeze for 4 hours or overnight.

Almost 1/2 the daily recommended fibre. 
Protein from the yogurt and collagen powder.
Healthy fats from the chia seeds BUT ALSO… chia seeds absorb up to 10x their weight in water so they help keep you fuller longer because they swell up and expand in your stomach. 
Cinnamon to help balance blood sugar. 
Yogurt to make this thick and creamy but also adds protein and probiotics.

RECIPE: TIRAMISU CHIA PUDDING 

INGREDIENTS: 
2 Tbsp chia seeds @costco_canada 
1 tsp ground flax @bobsredmill 
1/4 cup strong coffee 
3/4 cup high protein yogurt @ovinofarm 
1 scoop unflavoured collagen @hela_nutrition 
1 Tbsp date syrup @dvashorganics 
1/4 tsp true cinnamon @chasorganics 
1/2 tsp pure vanilla extract 
Pinch sea salt 
Cacao powder for dusting 

TO MAKE >>> add all ingredients to bowl (except the cacao powder) and mix well to combine. Cover and let set in the fridge for 4 hours or overnight. Before serving, dust with cacao powder. 

MEAL PREP TIP >>> make at least 3 portions for the week they store well in the fridge for up to 4 days.

The moment I took my first bite, I knew I had to s The moment I took my first bite, I knew I had to share this SPICY SALMON CRISPY RICE BOWL. It’s perfect for #mealprep because it’s made with leftovers!

RECIPE: SPICY SALMON CRISPY RICE BOWL

Ingredients: 
Crispy Rice:
1 cup leftover rice (basmati or Jasmine)
2 tsp toasted sesame oil 
1 tsp soy sauce 

Spicy Salmon:
1 salmon fillet
1 tsp tamari sauce (or soy sauce) 
1 tsp honey 
1 tsp sriracha sauce 

Assemble the bowl: 
1/2 cucumber, chopped
1/4 bunch fresh cilantro, roughly chopped 
1 spring onion, chopped
1/2 avocado 

Dressing: To be honest, everything is so flavourful you really don’t need much more than a drizzle of sriracha and a squeeze of lime.

DIRECTIONS: For the crispy rice, add all the ingredients to a small bowl and mix to everything well coated. Crisp up the rice on the stove top in a fry pan or in the oven. 
For the salmon, pay dry then brush with the tamari sauce, honey and sriracha. Place it on a parchment lined baking sheet, then cook at 400°F for 12 to 15 minutes.
Assemble your bowl with the remaining ingredients and drizzle with sriracha and a squeeze of lime.

I just learned that adding wild blueberry jam 🫐 to my ice drinks is just like adding tapioca pearls (aka bubble tea) >>> the wild blueberries are sweet and slightly chewy. 

This blueberry vanilla matcha tastes like a fancy bubble tea without the sugar and junk ingredients and for a fraction of the cost!

INGREDIENTS: 
▪️ 3/4 cup milk (I used @addjoi cashew milk) 
▪️ 1 scoop marine collagen @hela_nutrition 
▪️ 1 Tbsp pure maple syrup (or raw honey)
▪️ 1 tsp pure vanilla extract @costco_canada 
▪️ 1 -2 servings of matcha @erbologyofficial 
▪️ 1/3 cup water 
▪️ 1 - 2 tbsp wild blueberry fruit spread @longosmarkets 

DIRECTIONS: Add milk, collagen, maple syrup, and vanilla extract to a high-speed blender and blend until smooth and frothy. Spoon wild blueberry fruit spread into the bottom of a glass. Add ice then pour the milk mixture over the ice. glass filled with ice. Using the same blender, add the matcha and water and blend until smooth. Pour over the frothy vanilla milk.

INGREDIENTS:
▪️ 1 cup natural peanut butter
▪️ 3/4 cup rolled oats 
▪️ 1 large egg (or flax egg)
▪️ 1/2 cup coconut sugar
▪️ Pinch sea salt
Optional: 1/2 cup dark chocolate chips 

DIRECTIONS:
✔️ Preheat the oven to 350F. Line a large baking sheet with parchment paper and set aside. 
✔️ In a large mixing bowl, combine peanut butter, egg, coconut sugar and salt until a relatively smooth batter is formed.
✔️ Fold in the rolled oats and optional chocolate chips until combined.
✔️ Using your hands, form the dough into small balls and place them onto the lined sheet. Press down on each ball to flatten. 
✔️ Bake the cookies for 10-12 minutes, or until mostly golden around the edges. 
✔️ Remove the cookies from the oven and allow them to cool completely, before serving.
