Smokey, creamy and full of flavour, this is everything you can ask for in a southwest inspired dressing. Made with tahini and fresh lime juice and seasoned with paprika, chili powder and a touch of garlic for extra flavour (and pure maple syrup for a touch sweetness).
TAHINI is made from roasted or raw sesame seeds that have been ground into a smooth and creamy paste. It is a healthier alternative to a traditional mayo-based dressing without sacrificing the rich and creamy taste.
This dressing or sauce is perfect for rice + bean bowls, tacos or fajitas, Buddha bowls, or even salads. Use this as a sauce or dip or drizzle it on everything!
INGREDIENTS:
- 1/2 cup tahini (ground sesame seeds)
- 2 Tbsp pure maple syrup
- 1 Tbsp apple cider vinegar
- 3 Tbsp fresh lime juice (approx. 2 limes)
- 2 garlic cloves, minced
- 1 tsp paprika
- 1 tsp chili powder
- ¼ cayenne pepper, optional
- 1/2 tsp sea salt
- 4 – 6 Tbsp warm water, as needed
DIRECTIONS:
Combine all the ingredients for the sauce (except for the water) in a large measuring cup or jar and whisk to fully combine. Add warm water as needed 1 tablespoon at a time, until desired consistency is reached. NOTE: The mixture may seize up and thicken at first but continue adding warm water a little at a time and whisking until creamy and smooth. Taste and adjust the seasoning as desired. Store in the fridge for up to 5 days.
