ZUCCHINI CHOCOLATE CHIP MUFFINS by  @guidedwellnessbyangela 

👉 One bowl 
👉 Nutrient dense ingredients 
👉 Kid (and husband) approved

… and I promise you won’t taste the zucchini. 

INGREDIENTS: 
▪️ ½ cup melted coconut oil
▪️ ½ cup coconut sugar
▪️ 2 large eggs (or flax eggs)
▪️ 1 medium (9oz) zucchini, shredded (no need to wring dry) 
▪️ 2 cups sifted oat flour (or whole wheat flour)
▪️ 2 tsps cinnamon
▪️ 1 tsp baking soda
▪️ 1 tsp baking powder
▪️ 1 tsp pure vanilla extract 
▪️ ¼ tsp ground nutmeg
▪️ ½ tsp sea salt
▪️ 1/2 cup dark chocolate chips

DIRECTIONS: 

1️⃣ Preheat your oven to 350°F(177°C). Grease a 12-count muffin pan with olive oil or coconut oil and dust with a bit of flour (or use muffin liners).

2️⃣ In a large bowl, whisk together melted coconut oil and sugar. Add eggs and vanilla and whisk to combine. Stir in shredded zucchini.

3️⃣ Add remaining ingredients (except chocolate chips) to zucchini mixture and mix to combine. Careful not to over mix to ensure your muffins will be fluffy. Next fold in the chocolate chips.

4️⃣ Spoon in batter and fill almost to the top (I like to add a few more chocolate chips but that is totally optional). Bake for 18 – 22 mins at 350°F (177°C) or until a toothpick inserted in the center comes out clean.

Layer the following ingredients into a parchment lined baking pan.

Layer 1: flattened dates
Layer 2: nut butter (I prefer peanut butter)
Layer 3: peanuts (roasted + salted)
Layer 4: make my 3-ingredient homemade chocolate 👇

3-INGREDIENT HOMEMADE CHOCOLATE >>> mix together the following ingredients until completely smooth.

▪️2 Tbsp melted coconut oil

▪️2 tsp pure maple syrup

Place the tray in the fridge or freezer until set. Cut into pieces and enjoy!

These are my TIRAMISU OVERNIGHT OATS, one of my most requested breakfast meal prep recipes! 

📌 SAVE THIS RECIPE 

RECIPE: TIRAMISU OVERNIGHT OATS 

OVERNIGHT OATS:
▪️ 1/2 cup rolled oats 
▪️ 1/2 ripe banana, mashed 
▪️ 1 scoop unflavoured collagen powder 
▪️ 1 Tbsp chia seeds
▪️ 1/4 tsp cinnamon 
▪️ 1/3 cup brewed coffee
▪️ 2/3 cup milk of choice
▪️ 1 tsp maple syrup
▪️ 1/2 tsp pure vanilla extract 
▪️ cacao powder for dusting 
Optional: 1 serving organic lion’s mane powder

CACAO CREAM:
▪️ 2 tbsp chia seeds
▪️ ½ cup milk of choice 
▪️ 2 tsps cashew butter
▪️ 1 tbsp cacao powder
▪️ 1 tbsp maple syrup

DIRECTIONS: 
First, prepare the overnight oats by adding all the ingredients (except the lion’s mane) to a bowl, mix together until combined. Next, prepare the cacao cream by adding all the ingredients to a high-speed blender and blend until smooth and creamy. Allow the overnight oats and the cacao cream to set in the fridge overnight. Before serving, add the lion’s mane powder and mix it into the overnight oats. Top with the cacao cream and a dusting of cacao powder.

INGREDIENTS:
▪️ 1 cup natural peanut butter
▪️ 3/4 cup rolled oats 
▪️ 1 large egg (or flax egg)
▪️ 1/2 cup coconut sugar
▪️ Pinch sea salt
Optional: 1/2 cup dark chocolate chips 

DIRECTIONS:
✔️ Preheat the oven to 350F. Line a large baking sheet with parchment paper and set aside. 
✔️ In a large mixing bowl, combine peanut butter, egg, coconut sugar and salt until a relatively smooth batter is formed.
✔️ Fold in the rolled oats and optional chocolate chips until combined.
✔️ Using your hands, form the dough into small balls and place them onto the lined sheet. Press down on each ball to flatten. 
✔️ Bake the cookies for 10-12 minutes, or until mostly golden around the edges. 
✔️ Remove the cookies from the oven and allow them to cool completely, before serving.

INGREDIENTS:
▪️ ½ cup melted coconut oil
▪️ ½ cup coconut sugar 
▪️ 2 large eggs (or flax eggs)
▪️ 1 cup shredded zucchini (squeezed)
▪️ 1 ripe banana mashed
▪️ 1 tsp pure vanilla extract 
▪️ 1 1/2 cups whole wheat flour
▪️ 1/2 cups cocoa powder
▪️ 1 tsp baking soda
▪️ 1 tsp baking powder
▪️ ½ tsp sea salt

INGREDIENTS: CREAM CHEESE FROSTING
▪️ 4 oz natural cream cheese
▪️ 2 Tbsps cane sugar (finely ground to resemble powdered sugar)
▪️ 2 tsp lemon juice, freshly squeezed 
▪️ Pinch sea salt 

INGREDIENTS: CHOCOLATE FROSTING 
▪️ 3/4 cup cocoa powder 
▪️ 1/4 cup coconut oil, melted 
▪️ 1/2 cup pure maple syrup 
▪️ 1 tsp pure vanilla extract 
Optional: pinch of sea salt and a splash of espresso for a rich deep chocolate flavour. 

DIRECTIONS:
1️⃣ Preheat your oven to 350°F(177°C). Line a 9x13 baking pan with parchment paper and set aside.
2️⃣ In a large bowl whisk together all of the dry ingredients (except for the sugar) and set aside.
3️⃣ In a stand mixer, beat the sugar and coconut oil for approximately 1 - 2 mins. Add in the eggs, well then add in the mashed ripe bananas and give another mix until all of the wet ingredients are well combined.
4️⃣ Pour the dry ingredients into the wet ingredients, then mix just until the combined. 
5️⃣Pour batter into parchment lined baking pan and bake using the ovens convection setting for approx 22 mins at 350°F (177°C) (or until a toothpick inserted in the center comes out clean).
6️⃣ Prepare the frosting. In a stand mixer, add  all of the ingredients for the frosting and cream together well. Store in the fridge and spreads over cake once it has completely cooled.
