RECIPE: GINGERBREAD GRANOLA
INGREDIENTS: 
▪️ 3 cups @bobsredmill rolled oats 
▪️ 1/2 cup @bulkbarnfoods pumpkin seeds 
▪️ 1/2 cup chopped almonds (or walnuts)
▪️ 1/4 cup sesame seeds (or sunflower seeds)
▪️ 3 Tbsp flax seeds
▪️ 3 Tbsp @manitobaharvest hemp seeds
▪️ 1 Tbsp gingerbread spice blend (see pinned comment)
▪️ 1/2 tsp sea salt
▪️ 1/2 cup tahini (or nut/seed butter)
▪️ 1/2 cup coconut oil @chasorganics (or olive oil)
▪️ 1/4 cup @bulkbarnfoods unsulphured molasses (I like blackstrap)
▪️ 1/4 cup pure maple syrup 
▪️ 1/2 cup raisins (add these in at the end)

Directions
1️⃣ Preheat the oven to 350°F. Line a rimmed baking sheet with parchment paper. 
2️⃣ In a large bowl, combine the dry ingredients and mix well to combine.
3️⃣ Add the tahini, coconut oil, molasses and maple syrup to a small sauce pan and heat over medium low heat while stirring. Once combined pour over dry ingredients.Mix well, until the oat mixture is completely coated.
4️⃣ Spread the mixture out onto the prepared baking sheet and press down gently using the back of a spatula or spoon. 
5️⃣ Gently bake for 15 - 20 minutes, until fragrant and golden. Turn the pan half-way through for more even baking. 
6️⃣ Do not stir while baking. Let it cool completely before breaking up the granola and transferring it into airtight glass containers. Add in the raisins after the granola is done baking otherwise I find they get too hard.

RECIPE ⬇️ Let’s make the AUTUMN TURKEY SALA RECIPE ⬇️

Let’s make the AUTUMN TURKEY SALAD as featured in The Ultimate 🦃 Turkey #mealprep I shared in my last post. This salad is perfect for thanksgiving leftovers or sub for roasted chicken breast. ⚠️ WARNING: the MAPLE TAHINI DRESSING is seriously delicious will have you coming back for more!!!!

START by adding your choice of leafy greens to the bottom of a bowl (KALE works really well with the flavours of this salad). Next, add thinly sliced roasted turkey breast, chopped apple and roasted sweet potatoes (or squash). Drizzle on the MAPLE TAHINI DRESSING (recipe below ⬇️) and top with a sprinkle of pumpkin seeds and dried cranberries.

RECIPE: Maple Tahini Dressing 
INGREDIENTS: 
½ cup raw tahini paste
1/3 water or more as needed 
1/2 lemon, freshly squeezed 
2 garlic cloves chopped
2 tbsp maple syrup
1 tbsp apple cider vinegar
2 tbsp olive oil
1 tsp sea salt 
1/2 tsp cinnamon 
1/4 tsp cumin powder 
1/4 tsp turmeric powder
pinch black pepper 

Directions: Blend together all the ingredients until smooth, pour into a glass jar and store in the fridge for up to 4 days.

Here’s how I turn this flavourful protein 🦃 i Here’s how I turn this flavourful protein 🦃 into the ultimate turkey meal prep. It’s a great way to use up leftovers or an entire turkey!

Step 1: use the carcass and any leftover bones to make a gut-healing bone broth. 
Method: recipe pinned in caption.
➡️ Sip on a cup of this broth all week long or use it as the base for soups, stews or risotto. 

Step 2: use the turkey breast for salads, nourish bowls or sandwiches. 
Method: thinly slice the turkey breast and store in glass container in the fridge for up to 4 days.
➡️ Serve over a bed of leafy greens or brown rice. Enjoy as a sandwich.

Step 3: use the turkey legs and thighs to make an immune-supporting turkey soup. 
Method: search “immune boosting soup” on the website for the recipe.
➡️ Add rice or noodles or serve with crusty bread. Freeze extra portions for a simple weeknight reheat.

Step 4: prep my simple cranberry sauce.
Method: see previous post for the recipe.
➡️ Spread it on toast, add it to turkey sandwiches or make my cranberry baked oats recipe.

Step 5: prep an easy dressing like my maple tahini dressing which pairs perfectly with turkey. 
Method: see below.
➡️ Drizzle over salads, nourish bowls or even roasted veggies.

Make a batch of nourishing PUMPKIN SPICE CHIA PUDDING, divide into 3 servings and try these delicious warming toppings for a different breakfast experience each day!

🍎 APPLE CINNAMON: 
▪️ 1/2 cup chopped apples 
▪️ 1/2 tsp ground cinnamon
▪️ 1 Tbsp pumpkin seeds @bulkbarnfoods 

🍌 BANANA DATE:
▪️ 1/2 cup sliced bananas 
▪️ 2 tsps date syrup @dvashorganics 
▪️ 1 Tbsp hemp seeds @manitobaharvest 

🍁 MAPLE CINNAMON GRANOLA: 
▪️ 1/2 cup plain natural yogurt @ovinofarm 
▪️ 1/3 cup Maple Cinnamon granola @nolabaking 

PUMPKIN SPICE CHIA PUDDING

(Serves 3)
INGREDIENTS:
▪️ 6 Tbsp chia seeds @costco_canada 
▪️ 3 Tbsp ground flax 
▪️ 2 1/2 cup milk of choice
▪️ 6 Tbsp pure pumpkin purée @e.d.smithfoods 
▪️ 6 tsps pure maple syrup 
▪️ 1 tsp pumpkin spice 
▪️ 2 tsp pure vanilla extract @costco_canada 
▪️ 2 scoops protein powder @hela_nutrition 

DIRECTIONS:
To a bowl, add chia seeds, ground flax, milk and stir to combine.  Let sit 5-10 minutes to thicken and mix to combine. Add remaining ingredients and mix until combined. Store in an airtight container (or individual serving containers) in the fridge for up to 4 days. Before serving add desired toppings.

RECIPE: PUMPKIN SPICE MUFFINS 
with a (healthier) cream cheese frosting 

INGREDIENTS:
▪️ 2 cups oat flour (finely ground rolled oats) @bobsredmill 
▪️ 2 tsp baking powder
▪️ 1 tsp baking soda
▪️ 1 Tbsp homemade pumpkin spice (see comments)
▪️ 1/2 tsp sea salt
▪️ 1 cup pure pumpkin purée @e.d.smithfoods 
▪️ 3 eggs
▪️ 3/4 cup coconut sugar @chasorganics 
▪️ 1/2 cup coconut oil, melted @chasorganics 
▪️ 1/3 plain yogurt @astroyogurt or coconut yogurt @simplafoods 
▪️ 1 tsp pure vanilla extract @costco_canada 

INGREDIENTS: CREAM CHEESE FROSTING
▪️ 4 oz natural cream cheese @arlacanada 
▪️ 2 Tbsps cane sugar (finely ground to resemble powdered sugar)
▪️ 2 tsp lemon juice, freshly squeezed 
▪️ Pinch sea salt 

DIRECTIONS:
1️⃣ Preheat oven to 350°F (177°C). 
2️⃣ Beat eggs and coconut sugar until fluffy. Add in melted coconut oil, pumpkin purée, yogurt, vanilla extract and mix until well combined.
3️⃣ Add the dry ingredients and mix just until combined. Do not over mix.
4️⃣ Spoon batter into greased muffin tins and fill almost to the top.
5️⃣ Bake for 18 – 22 mins at 350°F (177°C) or until a toothpick inserted in the center comes out clean.

CREAM CHEESE FROSTING: In a stand mixer, add all of the ingredients for the frosting and cream together well. Store in the fridge and spread over muffins once they have completely cooled.
