TAHINI CARDAMOM ENERGY BALLS

Hello September. Hello FALL spices.

These TAHINI CARDAMOM ENERGY BALLS are infused with two of my favorite spices CINNAMON and CARDAMOM. Blended with flavorful TAHINI, sweet chewy DATES, rolled OATS and a touch of RAW HONEY – these beauties have really satisfied my current cravings for Middle Eastern sweets.

TAHINI or sesame seed paste, is a staple of Middle Eastern and Mediterranean cooking. This protein-rich paste contains important minerals such as MAGNESIUM, IRON and CALCIUM and can be used for so much more than hummus and baba ganoush! I love incorporating TAHINI into my sweet treats. The intense nutty flavor is a nice switch up from the more common nut butters (no offense to my beloved peanut butter).

DATES are the perfect binder when it comes to ENERGY BALLS because of their chewy texture and natural sweetness. Feel free to use Medjool dates for this recipe, however standard dry DATES available in any grocery store work perfectly for this recipe. Simply remove the pits and cover with warm water for about 5 – 10 minutes to allow the dates to soften up. Dates are truly nature’s candy and offer ample sweetness, but I couldn’t resist adding a touch of RAW HONEY to elevate the flavor. The combination of honey + tahini + spices is heavenly!

When making ENERGY BALLS I prefer to use my food processor in order to effortlessly breakdown the dates and easily combine all ingredients. You will want to reserve the soaking water from the dates in case you need a little extra liquid to help the mixture come together. And after adding the rolled oats and oat flour to the date mixture, pulse just until the mixture is fully combined. You want to retain the texture of the ROLLED OATS rather than turning the mixture into a paste, so careful not to overmix.

These ENERGY BALLS are perfect for breakfast on-the-go or as a post workout snack. I love to enjoy them as an afternoon pick-me-up alongside a cup of tea or strong coffee. Place them in an airtight container and store them in the fridge or freezer and watch them disappear!


 

TAHINI CARDAMOM ENERGY BALLS

Makes about 18 – 22 balls

Ingredients:

    • 1 ½ cup pitted soaked dates
    • 2/3 cup tahini
    • 2 tbsps raw honey
    • 1 ½ tsp ground cardamom
    • 1 tsp ground cinnamon
    • 1 ½ cup rolled oats
    • 1 cup finely ground oats
    • ½ cup sesame seeds (to coat)
    • Pinch of sea salt

Directions:

Step 1: Combine dates (pitted and soaked in warm water for 5-10 mins), tahini, honey, cardamom, cinnamon and sea salt in a food processor and pulse until dates are fully chopped and everything is fully combined.

Step 2: Add rolled oats and finely ground oats, pulse just until fully combined. Careful not to overmix.

Step 3: Roll into 1 inch balls and then coat with sesame seeds. Place balls into an airtight container and store in the fridge or freezer.
