Coconut meets oatmeal cookie!
No eggs. No butter. No baking experience required!

Recipe inspired by Carine @theconsciousplantkitchen

If you’re looking for a cookie recipe that uses no eggs or butter….you’ve come to the right place. This vegan cookie recipe is the perfect blend of coconut and rolled oats perfect with a cup of tea or coffee ☕️ #anzacday

INGREDIENTS:
▪️ 1 cup rolled oats
▪️ 1 cup whole wheat flour (or spelt flour)
▪️ 1 cup unsweetened shredded coconut
▪️ 1/4 cup coconut sugar
▪️ 1/4 cup pure maple syrup
▪️ 1 tsp baking soda
▪️ 1/3 cup virgin coconut oil, softened
▪️ pinch sea salt
▪️ 2 -3 tsp warm water, as needed

DIRECTIONS:
In a large bowl, combine dry ingredients then add wet ingredients (except for the water). Mix to combine. Add water a teaspoon at a time as needed to help the dough come together. Form into balls then lightly fatten. Cookies will spread so leave about 2-3 inches in between the cookies. Bake on a parchment lined baking sheet 350F for 12-14 minutes or until golden brown.

That’s why these LEMON BLUEBERRY muffins (made with zucchini 🤫) will be your new favourite MUFFIN recipe!

RECIPE: LEMON BLUEBERRY ZUCCHINI MUFFINS

INGREDIENTS:
▪️ ½ cup melted coconut oil
▪️ ½ cup coconut sugar
▪️ 2 large eggs (or flax eggs)
▪️ 1 lemon, juice and zest
▪️ 1 medium (9oz) zucchini, shredded (don’t wring dry)
▪️ 2 cups sifted oat flour (or whole wheat flour)
▪️ 2 tsps cinnamon
▪️ 1 tsp baking soda
▪️ 1 tsp baking powder
▪️ 1 tsp pure vanilla extract
▪️ ¼ tsp ground nutmeg
▪️ ½ tsp sea salt
▪️ 1 cup blueberries (reserve 1/4 cup to add on top)
Optional: 2 Tbsp Demerara sugar for sprinkling on top.

DIRECTIONS:
Preheat your oven to 350°F(177°C). Grease a 12-count muffin pan with olive oil or coconut oil and dust with a bit of flour (or use muffin liners).

In a large bowl, whisk together melted coconut oil and sugar. Add eggs and vanilla and whisk to combine. Add lemon juice and zest and whisk to combine. Stir in shredded zucchini.

Add remaining ingredients (except blueberries) to zucchini mixture and mix just until combined. Careful not to over mix to ensure your muffins will be fluffy. Next fold in 3/4 cup blueberries.

Spoon in batter and fill almost to the top add 1/4 cup blueberries on top. Sprinkle with Demerara sugar, if desired. Bake for 18 – 22 mins at 350°F (177°C) or until a toothpick inserted in the center comes out clean.

Make a batch of nourishing PUMPKIN SPICE CHIA PUDDING, divide into 3 servings and try these delicious warming toppings for a different breakfast experience each day!

🍎 APPLE CINNAMON:
▪️ 1/2 cup chopped apples
▪️ 1/2 tsp ground cinnamon
▪️ 1 Tbsp pumpkin seeds @costco

🍌 BANANA DATE:
▪️ 1/2 cup sliced bananas
▪️ 2 tsps date syrup @dvashorganics
▪️ 1 Tbsp hemp seeds @manitobaharvest

🍁 MAPLE CINNAMON GRANOLA:
▪️ 1/2 cup plain natural yogurt @astroyogourt
▪️ 1/3 cup granola @nolabaking Maple cinnamon flavour

PUMPKIN SPICE CHIA PUDDING

(Serves 3)
INGREDIENTS:
▪️ 6 Tbsp chia seeds @costco
▪️ 3 Tbsp ground flax
▪️ 2 1/2 cup milk of choice
▪️ 6 Tbsp pure pumpkin purée @e.d.smithfoods
▪️ 6 tsps pure maple syrup
▪️ 1 tsp pumpkin spice
▪️ 2 tsp pure vanilla extract @costco

DIRECTIONS:
To a bowl, add chia seeds, ground flax, milk and stir to combine. Let sit 5-10 minutes to thicken and mix to combine. Add remaining ingredients and mix until combined. Store in an airtight container (or individual serving containers) in the fridge for up to 4 days. Before serving add desired toppings.

Work smarter, NOT harder!

Stews, soups, and chilies like this HEARTY 3-BEAN CHILI are perfect as “planned leftovers”.

Plan ahead 👉 at the beginning of the week identify your busiest days. Prep a large batch of stew, soup, curry, chili or your favourite dish that reheats well, on a day that you have more time (possibly the weekend).

Work smarter 👉 make a double or triple batch of whatever you’re making! Meal prepping allows you to be more efficient in the kitchen. Recipes like this one re-heat extremely well. Store extra portions in the fridge up to 4 days or in the freezer for 3 months.

This is one of my most POPULAR breakfast MEAL PREP recipes. Make these CRANBERRY BAKED OATS and enjoy them all week long! Baked oats are a quick and easy breakfast meal prep. Just reheat and enjoy!

RECIPE: CRANBERRY BAKED OATS

INGREDIENTS:
▪️ 1 cup rolled oats
▪️ 1 cup oat flour
▪️ 1 cup cranberries (or raspberries), fresh or frozen
▪️ 3 mashed bananas
▪️ 2 eggs
▪️ 1/4 cup melted coconut oil
▪️ 1/4 cup milk
▪️ 1/4 cup coconut sugar
▪️ 2 Tbsps hemp seeds
▪️ 2 Tbsps chia seeds
▪️ 1 tsp baking powder
▪️ 1 tsp cinnamon

DIRECTIONS: Preheat oven to 380F. In a large bowl, mash bananas and whisk in eggs. Stir in milk, coconut oil and sugar. Add remaining ingredients and stir to combine. Pour into a greased 8X8 glass baking dish. Bake for 35-40 minutes until the edges are golden.

In case you’re looking for a high-protein snack that can double as a healthy sweet treat, your search is over ⤵️

BLUEBERRY YOGURT CLUSTERS w/ @nolabaking NOLA granola nut clusters for a bit of CrUnCh and my 3-ingredient homemade chocolate for dipping!

YOGURT CLUSTERS:
▪️ 1 cup blueberries
▪️ 1/2 cup plain natural yogurt
▪️ 2 Tbsps almond butter
▪️ 2 Tbsps pure honey
▪️ 1 tsp pure vanilla extract

3-INGREDIENT HOMEMADE CHOCOLATE:
▪️ 1/2 cup coconut oil
▪️ 1/2 cup cocoa powder
▪️ 3 Tbsps pure maple syrup
ADD: 1/2 cup NOLA granola @nolabaking (I’m using the coconut quinoa flavour)

DIRECTIONS:
1️⃣ In a large bowl, add the ingredients for the yogurt clusters and mix well to combine.
2️⃣ Add dollops of the yogurt mixture onto a parchment lined baking sheet. Place in the freezer for at least 2 hrs until completely frozen.
3️⃣ Prepare the 3-ingredient homemade chocolate >>> melt coconut oil, remove from heat. Stir in maple syrup and cocoa powder and mix until smooth. Stir in the granola until well combined with the chocolate.
4️⃣ Dip each frozen yogurt cluster into the chocolate granola mixture and place back onto the parchment lined baking sheet.
5️⃣ Return the tray back to the freezer for about 15 minutes until completely set.

(Serves 1 - 32oz mason jar)
RECIPE: CHOPPED CHICKPEA CURRY SALAD
INGREDIENTS:
▪️ 3/4 cup chickpeas, rinsed and drained
▪️ 1/2 cup chopped peppers
▪️ 1/2 cup chopped broccoli
▪️ 1/2 cup shredded carrots
▪️ 1/2 cup chopped apples
▪️ 1 cup cooked quinoa
▪️ 1 cup romaine lettuce
▪️ 2 Tbsps pumpkin seeds
▪️ 2 Tbsps dried cranberries

CREAMY CURRY DRESSING:
▪️ 3 Tbsps tahini
▪️ 2 Tbsps honey
▪️ 1 Tbsp tamari (or soy sauce)
▪️ 1/2 cup water
▪️ 1 1/2 lemon, freshly squeezed
▪️ 2 garlic cloves
▪️ 1 tsp sea salt
▪️ 1 tsp garam Marsala
▪️ 1/2 tsp cumin
▪️ 1/2 tsp ginger powder
▪️ 1/4 tsp turmeric powder
▪️ pinch black pepper (to help with turmeric absorption)
Blend together until smooth. Serves 3-4. Store in the fridge for up to 4 days.

TO MAKE >>> add a few tablespoons of the dressing to the bottom of a 32oz glass mason jar then layer in the ingredients as listed above. Secure the lid and store in the fridge for up to 4 days. Meal prep a few for the week!
