‘TWIX’ Bars No-Bake I decided there just was ‘TWIX’ Bars  No-Bake

I decided there just wasn’t enough chocolate on my feed - so here’s another delicious healthy twist on a popular favourite.  Of course these bars are refined sugar free and contain no artificial ingredients. These #nobake bars are #vegan #glutenfree and made with whole foods you can feel good about eating and feeding to your family.

BASE:
1 cup coconut flour
1 cup almond flour
1/4 cup melted coconut oil
3 Tbsps. pure maple syrup 
pinch of sea salt

VEGAN ‘CARAMEL’ LAYER:
1 cup pitted, soaked dates
1/2 cup nut butter (I used natural PB)
3 Tbsps melted coconut oil
pinch of sea salt
water as needed for blending

HOMEMADE CHOCOLATE LAYER:
1/2 cup coconut oil
1/2 cup cocoa powder
3 Tbsps. pure maple syrup 
pinch of sea salt 

TO MAKE 👉 line a loaf pan with parchment paper. In a medium bowl mix together the ingredients for the base (combine with a fork at first and then get in there with your hands 🙌) Form the dough into a ball and press into the pan. Add the pan to the freezer while you make the caramel. In a food processor (or blender) add the ingredients for the caramel and pulse until it forms a smooth paste. Add a splash of water (or the soaking water from the dates) if needed. Add the caramel to the base and return the pan to the freezer. To make my 3-ingredient homemade chocolate, gently melt the coconut oil in a small sauce pan, remove the pan from the heat and stir in the cocoa powder + maple syrup and mix until smooth. Add the chocolate to the caramel layer and finish with a sprinkle of sea salt. Return the pan to the freezer to firm up. When ready to enjoy remove the pan from the freezer and wait a few minutes before slicing into bars. ENJOY!

Our bodies can manufacture some vitamins but it cannot make MINERALS.

Minerals come from the EARTH (soil, rocks and water). 

That means that if mineral nutrients are present in the soil where our food is grown, those minerals will be provided to us when we eat that food.

Sadly the food grown our soil today may not contain all of the mineral nutrients it once as a result of environmental (soil depletion, pollution) and modern farming practices (use of fertilizers, same crop farming)

Mineral deficiencies are becoming more and more prevalent due to...

▪️Food processing and refining process (white flour, white rice, white sugar...) which strips away vital nutrients.

▪️Diets low in fresh fruits and vegetables and high in processed foods.

▪️Consumption of high-sugar foods, caffeine and alcohol which can flush away or deplete body minerals.

Minerals (like vitamins) are vital to both our physical and mental health. They are a basic part of every cell in our body including blood, nerve and muscle cells, even our pearly whites and bones. Minerals aid in the production of energy (metabolism) and they can help with muscle contraction, nerve transmission, blood and tissue formation.

HERE ARE A FEW WAYS TO ENSURE OUR BODIES HAVE OPTIMUM MINERALS LEVELS TO THRIVE 

🌈 Eat the rainbow. Consume a variety of nutrient dense whole foods. 

👨‍🌾 Support small farmers. Buy local fruits, vegetables and grains if possible. 

♻️ Composting. Nourish the soil in an effort to put back basic elements into the soil, so we can get them back from Mother Earth. 

🥕 Plant a garden. Eating fresh fruits and vegetables form your own composted garden.

🚫 Limit refined and processed food which has poor mineral and nutritional content.

SO...when it comes to your health and well-being

and commit to eating more fruits and vegetables everyday!

ZUCCHINI FRITTERS WITH A CREAMY LEMON DILL DIPPING ZUCCHINI FRITTERS WITH A CREAMY LEMON DILL DIPPING SAUCE

Using up the last zucchini from my garden along with some fresh dill to make these tasty ZUCCHINI FRITTERS and this delicious CREAMY LEMON DILL DIPPING SAUCE!

Everyone tends to have their own spin on how to make fritters like these 👉 for mine I like to use chickpea flour instead of all purpose and I really can’t be bothered squeezing out the grated zucchini and they turn out just fine! For flavourings I like to add a bit of finely chopped onion, powdered garlic and sea salt and an egg to keep all that yumminess together!

In my house you won’t find me frying anything in a thick layer of oil and there’s no exception with these fritters. I treat these just like I’m making a batch of pancakes with just a light brushing of coconut oil onto a skillet. No deep frying or greasy fritters for me thanks and trust me you’ll enjoy them better this way. They come out lighter and fluffier. Oh and of course I give them a generous sprinkle of sea salt while they’re still hot!

Ok enough about the fritters and on to the sauce...
This tangy yogurt dipping sauce is the real reason I love making these ZUCCHINI FRITTERS in the first place. It’s packed with freshly chopped dill, a healthy dose of fresh lemon juice and a bit of finely chopped garlic because after all every great yogurt sauce should have fresh garlic...just saying 🤷🏻‍♀️

This sauce is terrific as a tasty dip for fresh veggies or pita chips. It’s the perfect pairing with potatoes...baked, fried, roasted, you name it! I even use this as a dressing for fresh cucumber salad. Just think of this creamy goodness as a healthy substitute for that store bought “ranch” stuff.

To make the sauce 👉 mix together 3/4 cup plain natural yogurt, the juice of 1 fresh lemon, 1/4 cup chopped fresh dill, 1-2 cloves garlic finely chopped and sea salt to taste.

STRAWBERRY BANANA SMOOTHIE ❓DO YOU SNEAK VEGGI STRAWBERRY BANANA SMOOTHIE 

❓DO YOU SNEAK VEGGIES INTO YOUR SMOOTHIES ❓

You should be!

They add FIBRE, extra NUTRIENTS and a ton of VOLUME without adding extra calories. I like adding my veggies in frozen which is basically like adding ice cubes to chill down smoothie without watering it down! 

This STRAWBERRY BANANA SMOOTHIE is made with strawberries and bananas (of course) BUT there’s also a good handful of frozen CAULIFLOWER! You can’t taste it or see it, but it’s in there and I’m benefiting from the extra vitamins + minerals as well as a full serving of vegetables.

Greens like spinach and kale are common veggie additions that are quick to grab by the handful and toss into your smoothie however adding vegetables like cauliflower, zucchini and sweet potato are just as quick and easy to blend into your next healthy smoothie.

❓DO YOU LIKE ‘EM THICK? 🤭 
 (your smoothies, that is!)❓

The key to making this STRAWBERRY BANANA SMOOTHIE ❌TRA #thick and #creamy is using frozen bananas + frozen strawberries and just enough liquid to get it going and then adding just a bit at a time as needed until you’re satisfied 😉. We like using coconut milk @chasorganics but you can use any milk of choice or even water.

✅ Guided Wellness Tip: When cauliflower and zucchini is in season (or on sale), it’s a great time to prep some for smoothies. Simply wash your veggies and chop them into small pieces. Lay them out on a parchment lined baking sheet so that they are spread apart and then freeze at least 4 hours or overnight. Remove the baking sheet from the freezer and after a few minutes you can start to remove the frozen veggies from the pan and add them to a freezer bag or reusable freezer safe container. I do the same when I’m prepping frozen fruit to ensure that everything doesn’t get frozen into one big blob and I can easily grab my frozen fruit or veggies by the handful when needed!
