Citrus Beet Salad + Tangy Cumin Dressing

We all know how important it is to consume plenty of fruits and vegetables daily. Whole foods such as fruits, vegetables, nuts and seeds that have not been cooked retain their full nutrient potential and contain enzymes that naturally aid in digestion, not to mention they contain mineral-rich water for better health and hydration.

They will nourish the body on every level – physical, mental, emotional and even spiritual and you will no doubt notice an increase in energy!

This nourishing and refreshing beet salad is packed with raw nutrient dense beets, sweet carrots and tangy apples – a delicious way to add more raw whole foods into your diet.

Smothered in a tasty citrus dressing spiked with a hint of cumin and coriander and topped with a generous sprinkle of raw pumpkin and sesame seeds further adding to the salads healthy crunch factor!

The combination of flavors and wonderful bite helps to make this salad seriously addicting and will keep you coming back for more.

Enjoy this refreshing citrus beet salad as a tasty side dish or as a satisfying main course. It keeps well in the fridge for days which makes this perfect to include as part of your weekly meal prep and its one of my favorite ways to enjoy one fully raw meal a day.

Ingredients:

    • 4 medium carrots (peeled with tops removed)
    • 4 medium apples
    • 4 medium beets
    • ½ cup orange juice (freshly squeezed, approx. 1 orange)
    • ¼ cup lemon juice (freshly squeezed approx.. 1 lemon)
    • 1/3 cup extra virgin cold pressed olive oil (avocado or pumpkin seed oil)
    • 3 tbsp raw honey (or other sweetener of choice)
    • 1 tsp ground cumin
    • ½ tsp ground coriander
    • ½ tsp sea salt
    • 3 tbsp raw sesame seeds
    • 3 tbsp raw pumpkin seeds

Directions:

Step 1: Shred the raw beets, carrots and apples using a box grader or food processor with the shredder disk. No need to peel the beets or apples, you could also consider leaving the carrots unpeeled. Just make sure that the produce is washed well. Add the shredded beets, carrots and apples to a large glass bowl and set aside.

Step 2: To make the dressing use a small jar with a tightly fitted lid or a small bowl and whisk.  Add the juice from 1 orange and 1 lemon. Add the olive oil, honey (or sweetener of choice), ground cumin and coriander and salt. Mix the dressing until well combined.

Step 3: Add half of the dressing to the shredded beets, carrots and apples and toss to combine. Taste for seasoning. Add more dressing and salt as needed.

Step 4: Sprinkle the raw pumpkin and sesame seeds on top and toss to combine. If making the salad ahead of time, reserve the pumpkin and sesame seeds until serving so they retain their maximum crunch.
